I tend to use the fuzzy select tool (U), the free hand select tool (F) and the eraser (E). hair is a real pain with either of them

Path Tool to outline focused subjects and then create a selection from path with a
feather of 2px. For hair I use a graphics tablet with the
Eraser Tool to erase around the hair using a textured brush.
Depending on the complexity of the image it can take a while of editing to get a image to look good on light and dark backgrounds.
