1. Get an idea on what areas you can work on them with and what you can't
2. Get the chance to headhunt for your own org if the situation is simply unworkable
3. Get experience of working in an org, which even bad orgs can show you what not to do

The perfect org isn't likely to fall into your lap, but even working with bad ones can be productive.
