I imagine old China didn't have the best infrastructure for trecking out into the boonies. I think there's been a few dinos found in Eastern Europe but not many.
There were some Polish-Mongolian joint expeditions into Mongolia that found a lot of cool stuff. Also included arguably the most accomplished female paleontologists (dinos gone woke). Look up Zofia Kielan-Jaworowska, Teresa Maryańska, and Halszka Osmólska.
Pragmatically, dinos aren't terribly useful. Index fossils are good for identifying rock layers and looking for fossil fuel deposits, but those tend to be small, obscure marine orgasnisms that don't interest the public. Conodonts are kinda cool, though.
