the midwittery of youtube that comes to mind is stuff like superficial decodings of fiction or summaries of history, "reviews" of media that are filled with clichés and say the same thing everyone else is saying, drama shit using artificially neutered language, etc.
basically stuff that isn't super factually wrong (or at all) but is also very flat and basic and incurious yet treats itself as informative or interesting enough to demand 20+ minutes of your time

You can configure them to have blank front page or only your subscriptions etc.
First can only wrap into youtube, the second functions as a proxy. If you already have a VPN I'd recc. you try both, they both have pros and cons.
Freetube also includes an ad-skipper, while with invidious you just install sponsorblock in your browser separately (same function)

Genuinely why are you still on twitter, OP? There's nothing there. What one may used to have considered worth staying for is already on bluesky or fedi, and eventually everyone on bluesky will move to fedi as bluesky falls appart.

I block youtube recommendations, comments and the autofill search bar, my youtube experience is like a pre 2008 search engine, but for videos.

twitter is about following specific users so this isn't true. those who went to bsky are mostly really corny libs. most good artists, interesting gimmick accounts and people with actually funny posts and decent takes didn't move because bsky is just a much emptier site that screwed up its own launch. mastodon is better but it has even less people and they're all distributed across instances.
i feel like people who go "why do you still use twitter instead of <x>?" never actively used twitter to begin with or just used it to interact with people they know irl. which, fair enough, the pseudonymous part of twitter is mostly for people who are insane in an uncool way. but it doesn't have any real replacements.
