I'm already South American so other South Americans countries wouldn't feel different enough, and US culture is too ubiquitous. Currently considering

Just go for Mexico. You're already in South America so getting obsessive about Mexico won't be too hard. Although it will make you look less special than if you choose any country out of the region.

The problem is actually having access to information about a country, for example you're not going to find much on sub-saharan or random SEA countries and they don't have the soft power to spread their media. So the usual candidates are:
Japan, China, Korea, India, North America, Europe & Levant (take ur pick), Persia, Australia/NZ(?)

Mexican revolution it's pretty interesting.
Fun fact: During the revolution, Yucatan had the first socialist government in the Americas.
Compared to other states, Yucatan was more advanced in land redistribution, feminism and indigenous rights, but the governor got assasinated by a different faction and the progress were reversed.
Also, their symbol was the red wedge.
