It's kind of like camouflage, it makes a plane harder to detect, but it doesn't make them undetectable or make it unnecessary to have fighter escorts. Also it depends on how far away your "sensor" is, the type of wavelength the AD radar is operating on, various things like that. Serbia shot down an American stealth "fighter" (really a light bomber) in the 1990s and put the wreckage in a museum.
