Here is my contribution to start the ball rolling. Vegan nuggets with old discounted kipferls (no english word for it I realised) and mustard.

Did you know you can survive on beans and rice? I've legitimately gone months on end where that was all I ate. For my fellow poor's, this is a lifesaver. Prolly would've starved without it, or gotten stupid high blood pressure from eating ramen.

I regularly prepare filled flatbreads according to a chinese recipe. These can literally be made from just flour, water, some spices. vegetables and optionally meat.

Where i'm living flour appears to be the cheapest option there is in terms of calories. You can get a good pancake batter sans eggs if you mix flour and oatmeal 1:1 with some butter and let it rest in a bit of water for 15-20min. One serving (125g flour) should add up to about $0.2, frying and condiments excluded. I also made mandarin pancakes once, which are common in northern chinese cuisine and only require mixing flour with boiling water.

Things are going okay enough for me personally but the amount of suffering that my friends and family are going through is crazy. Everything from terminal illnesses to non terminal illnesses to substance abuse issues to relationship struggles. Call me selfish but as a non sentimental person it's been a bit exhausting "being there" for people

I tried making fired rice again. Didn't get the consistency quite right, but the taste seemed fine and i barely added any shoyu this time. The vegetables weren't as punchy as if i had fried at higher heat, but i think this is in line with the japanese version.

Baked potatoes, fried vegetable and tofu scramble. Slightly oversalted, but turned out decent.

FYI there are mushrooms, an onion, a clove of garlic, a few strips of chicken meat, two beateuyghs, a little sesame oil and a base of mirin in there. Maybe i should get a cabbage sometime too, i always wanted to try making yakisoba.

These look good! Mine are usually fried, since i don't have an oven. What's your potato seasoning? I usually add marjoram, paprika and plenty of salt and pepper at the end or sometimes i also keep frying them in a mix of shoyu and butter.

I first boil the potatoes in salty water so they soften a little. Then bake with the same seasoning as you do. Ocassionaly I also mix in chopped onions and garlic in the tray.

I 'm eating garlic pork stir-fry wrapped in mandarin pancakes. It's a delicious pairing!

300g pinto beans
200g pulled pork
56g shredded cheese
1000 calorie meal right there
lotta protein, lotta fiber, moderate amount of fat and carbs, gonna have a lot of flatulence but it was tasty. no picture but pork and beans aren't exactly photogenic to begin with huh.

My attempt at fried rice failed. First I forgot to soak chickpeas day before, so I had to substitute by canned beans, cheapest in store and not tasty at all, and I didnt have enough time or big enough pan to let cooked rice cool off and fry properly. So the end result is a risotto rather than intended meal.
Any other vegans here? All the other thread contributors are carnists :(

There are roughly two different approaches to making fried rice:
  1. Coat the rice with a lot of fat and start frying at medium to high heat.
  2. Gradually add everything else.

or
  1. Start with stir-frying meat or other protein-rich foods at the highest heat.
  2. Add any crunchy vegetables.
  3. Add aromatics and other ingredients like onions towards the end.
  4. With the heat still on pour in a moderate amount of sauce (soy, mirin, spicy bean paste), oil (this would be a good opportunity for sesame oil) and scramble in auygh.
  5. Finally mix your rice into the liquid and silently pray you're stirring fast enough to coat all of the rice before it sticks to the pan.

The latter is what i think is more traditionally associated with stir-frying and an approach you should definitely try if you haven't yet.
