isn't it because for most human beings the sex you are born with determines which type of gamete you can produce? hormones and surgery can alter the physical characteristics which are usually indicative of sex but cannot (yet) enable AFABs and AMABs to produce a different gamete. i am not an expert i could be mistaken.

Differences in physiology are more pronounced between individuals than between the average male and female. There's arguably a bigger gap on the extreme ends of the spectrum (like you see in top tier athletes) but that's still something to look for in the data.
